Granola Energy Bars

This week's bake at Tuesdays With Dorie (TWD) from Baking Chez Moi, is Granola Energy Bars. A healthy snack to start off our bake in 2015.



These bars are packed with oats, almonds, pumpkin seeds, sunflower seeds, shredded coconut, and 1 cup of mixed dried fruits, of which I've used a mixture of prunes, cranberries and apricots. Great way to use up all the bits and pieces in the pantry! Recipe uses brown rice syrup, an ingredient I could not find (and did not even know about it before this!), so I have used corn syrup instead. It works out great. I have however sliced the bar to 16 pieces instead of 20, as I find that cutting into 20 pieces would make very small bars.



The bars hold together really well on the first day, but I find that on the second day, they are a little crumbly and gets much chewier. These bars tastes very nice but I am enjoying it all by myself, as my family is not in favour of granola bars, any granola bars for that matter!  But I don't mind enjoying it all to myself. These bars make wonderful snack!

  13. Your bars look great, Joyce! I used apricots and cranberries also but you could use just about anything....they are wonderful way to clean out the pantry.

  14. Your bars look AMAZING! Those fruits and nuts really pop! Next time I'll try replacing the rice syrup with corn syrup. Would have saved me a lot of time trying to source it!

  15. Now I wish I had made the effort to go out in the snow and cold and score some pumpkin seeds as they really look good in your bars, they set them off just so nicely. Beautiful!

  16. I'm not sharing mine either--because I used gluten free oats and they aren't cheap. The boys love granola bars, but not all the nuts and fruit I put in them. These are a little crunchy, but good!

  19. i dont like hard granola bars. If its too crunchy I turn away from it but i like that yours are both chewy and crunchy in texture thanks to the nuts and all

  25. Wonderful looking bars, Joyce! I had never heard of Brown Rice syrup before this recipe either! I used a honey brown sugar mixture! These were really delicious and a keeper for sure!

  28. I have a similar recipe, and add peanuts to it. My dearly beloved likes them because they don't taste like commercial granola, which he likens to cardboard. Yours are holding together much better than mine do!
